When I remember Christmas as a child, I think of the whole house filled with the scent of cinnamon, clove, nutmeg and molasses.

My mother made homemade mincemeat pies every year at Christmas. This wasn’t an open the jar of mincemeat and pour the goop into the piecrust sort of thing. She made her mincemeat from scratch, with real meat, suet, apples, raisins, molasses, brown sugar and a whole list of spices.

Making mincemeat took all day. From about the age of five on, I helped in some way. Opening boxes of currants and raisins, and pouring them into the huge enamel kettle that took up two burners on the stove, was one of my first jobs. I can remember patiently pouring molasses into the kettle, making sure to get every drop out of the bottle, and putting in the spices after my mom measured them all.

This was before the time food processors became a fixture in many kitchens. We had one of those old time metal food grinders, the ones with c-clamps that fastened onto the edge of the kitchen table. Cooked stew meat, suet and the apples we’d peeled all went through the grinder, and from there into the kettle. Turning the handle on that grinder was one of my jobs too.

Once this whole gloppy mess began to bubble, the most heavenly sweet and spicy smell filled the house. That was always magic for me. It’s been years since I last made mincemeat, but I’ll never forget that smell.

That’s what Christmas will always smell like: apples, molasses, cinnamon, cloves, and brown sugar simmering on the stove.

  1. Damn, my favourite dessert?? I’m gonna go for this amazing dessert that my mum makes alternating layers of custard and muffin sliced up, then refrigerated till it gets solid. SO YUMMY!
